Dr. Kumfer's Kitchen: BBQ Chicken Pizza in a Pinch

Short on time? Craving Pizza but want to stay relatively on track with your diet? Try our BBQ Pizza in a Pinch! These pizzas will satisfy your craving for pizza and are calorically safe for most diets. And best of all, can be prepared in less than 20 minutes with little clean up.

We use shredded chicken in this recipe because in our house we generally make a large crock pot of chicken at the start of the week and use it up on meals like this. If you don’t currently do this, it is a great way to prepare healthy meal as it can be added to salads, wraps and tacos! If you don’t have any you can substitute deli sliced chicken as well.

What You Need

  1. Food (makes 1 Pizza)

  2. Cook and Shredded chicken (12 oz)

  3. 1 cup Cheese

  4. 2 TBSP BBQ Sauce

  5. Onion

  6. Green pepper

  7. 4 Soft Tortilla Shells

  8. Cookie Sheet

What You Will Do

  1. Preheat oven to 350 degrees

  2. While the oven preheats, dice pepper and onion.

  3. Place tortillas on cookie sheet.

  4. Add 2 TBSP BBQ sauce to each tortilla

  5. Then add ¼ cup of shredded chicken to each tortilla.

  6. Spoon desired amounts of pepper and onion to each tortilla

  7. Cover pizzas with ¼ cup of cheese each.

  8. Bake pizzas for 10-15 minutes until cheese is melted and crust is starting to brown.
