Dr. Kumfer's Kitchen: Breakfast Mini's

Looking for a balanced breakfast on the go? Look no further than our Mini Casseroles!!! Three ingredients, will make plenty for you to put in the refrigerator for the rest of the week.

What You Need:

  1. 5 Eggs

  2. 2 Sweet Potato

  3. 1 TBSP of Cilantro

  4. 1 cup Colby Jack cheese

  5. Muffin Pan w/ Muffin Cups

What You Do:

  1. Preheat oven to 375

  2. Dice Sweet potatoes into cubes, approx. ½ inch

  3. Add in all ingredients into bowl and mix well

  4. Dish mixture into muffin cups

  5. Bake for 35-40 minutes or until egg is thoroughly cooked.
