Dr. Kumfer's Kitchen: Egg Casserole

What’s better than having breakfast cooking while you are getting ready in the morning? This Egg Casserole is not only easy but you can do almost all the preparation the night before and simply put it in the oven in the morning! This recipe is easy to do and gives you something most people are missing in their breakfast…vegetables!!! Make this on a Sunday and you will probably have enough left over for a few mornings during the week.

What You Need

  1. Food (Makes 16 Servings)

  2. 16 Eggs

  3. 1 Pepper

  4. 1 Onion

  5. 1 Sweet Potato

  6. 1 Cup Spinach

  7. 6 pieces of Turkey Bacon

  8. 2 TBSP Olive Oil

  9. Cutting Board

  10. Mixing Bowl

  11. Casserole Dish (3 quart)

What You Do

  1. Preheat oven to 350 degrees

  2. Dice Pepper, Onion, Sweet Potato and Spinach

  3. Thoroughly mix Eggs, Diced Veggies, and Olive Oil in mixing bowl.

  4. Pour into casserole dish.

  5. Sprinkle uncooked bacon on top.

  6. Bake for 40 minutes or until the eggs are fully cooked.
