Dr. Kumfer's Kitchen: Cauliflower Rice
I love to cook. It’s nice to get in the kitchen, get messy, and then enjoy a delicious meal afterward. Generally speaking, I experiment with healthier meals that focus on meats, veggies, fruits and good fats. The main trick to cooking healthy is hiding the vegetables or transforming them into something most people like. I call it a trick because most people don’t like the taste of vegetables. In this article I tackle a wonderful side item in Cauliflower Fried Rice! Yum!!! Cauliflower is a great rice substitute because just like rice, there is not much natural flavor but rice has far less carbohydrates and calories.
What you Need
1 Head of Cauliflour
1 Green Pepper
1 Yellow Pepper
3 TBSP Olive Oil
3 TBSP Soy Sauce or Coconut Aminos*
*If you want to cut back on the sodium in your recipe, use Coconut Aminos. It will reduce your sodium by about 80% and doesn’t sacrifice flavor.
What You Do
With a large cheese grater, grate the head of Cauliflower and add to large mixing bowl.
Chop pepper and onion and add to Cauliflower.
Add 1 TBSP of Olive Oil to large pan and heat to medium heat.
Add vegetable mixture to pan and cook covered, stirring occasionally, for 25 minutes to soften veggies.
Then Add 2 TBSP of Oliver Oil and the Coconut Aminos and Eggs to pan and turn to Medium-High heat and mix constantly for 5-10 minutes to crisp and brown the mixture.
Remove from heat and serve. This recipe makes enough for 4 servings (approximately 1 cup per serving).
